Lemon Sole has smooth reddish brown skin with irregular marbling, very small heads and bulging eyes. The flesh is soft and white, similar to plaice but slightly superior. It is a good alternative to the more expensive Dover sole.When it comes to cooking techniques, lemon sole can be fried, or even grilled, and also steamed, or poached.
