kippersLock Fyne Kippers are notably the best Kippers you can buy, these are made by briefly brining split Herrings, then hanging them up in pairs and smoking them over oak fires for 4-18 hours. People are sometimes nervous about cooking kippers because of the smell. To avoid unpleasant odour, put them head down into a tall jug, pour over boiling water and leave to stand for around 8-10 minutes, by which time your kippers will be cooked. Kipper lovers usually grill skin side up or fry in shallow butter they make a delicious breakfast topped with a poached egg.
