Tuna is a substantial fish with a beautiful, torpedo shape they can grow to an enormous size (up to 700kg/1540lb). They have immensely powerful muscles and a firm, dark, meaty flesh. You should avoid buying fresh tuna if it is dull looking and brownish all over. The flesh should be pinkish to a dark deep red, and firm and compact. A fresh tuna steak is commonly cooked by searing both sides so the fish is cooked rare with a nice red to pink colour in the middle.
